Pumpkin Chocolate Chip Bread

Fall is by far my favorite season. I love the smells when the weather changes and all the new decor is being displayed at stores. Baking bread during this season is a time honored tradition in my house and is almost therapeutic. Enjoy this recipe!

Dry Ingredients

1 c. flour

1 c. packed brown sugar

1 tbs. baking powder

1/4 tsp. baking soda

1 tsp. ground cinnamon

1/4 tsp. ground (fresh) nutmeg

1/4 tsp. salt

1/2 c. chocolate chips (or chunks)

Wet Ingredients

1 can pumpkin (Trader Joe’s has a good one)

1/2 c. non-dairy milk (your choice)

2 eggs

1/3 c. butter (use the good kind for delicious flavor)

Steps

Spray the bottom of a loaf pan. I like to use coconut spray. In a medium size bowl combine dry ingredients. Add the wet ingredients until blended. Try not to over mix, just fold until well combined. Last step, fold in your preferred chips.

Bake in a 350 degree oven for 60-65 minutes. Check loaf with a toothpick or fork until it comes out clean.

Cool completely (or until you can wait!)
